Algae are considered a superfood for their high content of protein, calcium, iron, and omega-3 fatty acids. Besides their nutritional and physiological advantages, algae make exciting raw materials in creative product developments for their colouring properties. 

In Southeast Asia, algae are used preferentially for colouring in cosmetics applications while, in Western countries by contrast, algae tend to be favoured as ingredients in convenience foods, confectionary, and baked goods.  Through our partnership with Sensient Food Colors Europe, our range includes highly standardized and stable colouring foodstuffs based on algae. Armed with green and blue colours, we are in an ideal position to support your innovative developments and creation of exciting colour combinations. 

Under the brand name Cardea, Sensient offers a full product line made exclusively from natural ingredients and concentrates. These colours help in attaining consumer-friendly labelling, since they comply with the EU Guidance Notes and are therefore deemed colouring foodstuffs. 

The newest addition to the Cardea line is Chlorella, a freshwater algae coloured green by chlorophyll. This innovative product offers outstanding heat resistance, but only has low acid stability.

 

Accordingly, Chlorella colouring powder is suitable for the following applications:

  • Baked goods and (fine) pastries
  • Extrudates
  • Tablets and capsules
  • Pasta
  • Glacé

Alongside Chlorella, the Cardea line also includes another colour from algae: Blue from Spirulina. This algal extract is also a Clean Label colour. Customized shades of blue can be produced by regulating the pH and dosage. By mixing in yellow-colouring foodstuffs (e.g. from safflower), it is also possible to create various shades of green.

Blue from Spirulina is especially effective in the following product categories:
