Under the brand name Cardea, Sensient offers a full product line made exclusively from natural ingredients and concentrates. These colours help in attaining consumer-friendly labelling, since they comply with the EU Guidance Notes and are therefore deemed colouring foodstuffs.
The newest addition to the Cardea line is Chlorella, a freshwater algae coloured green by chlorophyll. This innovative product offers outstanding heat resistance, but only has low acid stability.
Alongside Chlorella, the Cardea line also includes another colour from algae: Blue from Spirulina. This algal extract is also a Clean Label colour. Customized shades of blue can be produced by regulating the pH and dosage. By mixing in yellow-colouring foodstuffs (e.g. from safflower), it is also possible to create various shades of green.
