Olive oil is an essential part of Mediterranean cuisine. This green gold is especially known for its polyphenol content, unsaturated fatty acids, and of course its unmistakable flavour. Like the oil, olive pomace also contains many valuable ingredients.

One example is olive-derived hydroxytyrosol, which has an extremely strong antioxidant action. Hydroxytyrosol is of purely natural origin and is obtained from olive pomace by aqueous extraction.

The olive extract NexOlive™ 3 Clear Organic contains 3 % hydroxytyrosol, is obtained from previously unused by-products, and is available exclusively in organic quality.

Application and effects

The antioxidant properties of NexOlive™ 3 Clear Organic can be used in many areas of food production.

Being declarable as an olive extract or as a natural flavouring, NexOlive™ 3 Clear Organic is predestined for use in savoury & convenience recipes. It protects sauces, mayonnaises, margarines, dressings, and other similar products from rancidity while also stabilizing their colour.

NexOlive™ 3 Clear Organic is used in the meat industry to minimize light and/or oxygen-induced oxidation. Compared to rosemary extract, olive extract has less of an effect on the flavour and colour. Because hydroxytyrosol’s antioxidant effect prevents oxidation from exposure to light and oxygen, it is perfect for increasing the colour and flavour stability of meat products in storage.

Given its low flavour intensity and outstanding pH and light stability, NexOlive™ is also suitable for use in drinks, conserves, baked goods, and confectionery.

NexOlive™ 3 Clear Organic has been tested for diverse applications and is already being used successfully in a wide range of products.
